Well, the obvious uses are:
1) Spotters
2) Urban Ambushes
3) Other Ambushes
4) Gunfodder
However!
I've found that infantry are amazingly good at hitting stragglers. Let them move around or, better, hide, then not reveal themselves until several mechs are beaten up. Then, and only then, do the infantry show up and start nicking the wounded. When you're missing armor on two or three locations, and holding another together with chewing gum, a sudden pop-up of SRM infantry will put The Fear in you, lickety-split.
Infantry are also amazing for taking out vehicles that only sport anti-tank weapons (Like those armed with a Gauss Rifle or three and nothing else!) or artillery, provided that they have a good transport for taking it to the other side.

Wait until the infantry platoon construction rules come out (In Combat Ops, IIRC) shortly...

Infantry is good for infantry work. Recon on foot, camp security, mopping up operations, holding ground, garrisoning...etc
On a direct fight against 'Mechs or armor, they are going to take heavy casualties unless they have the benefits of cover or positions, and a lot of heavy weapons.
However, they can be deadly against 'Mechs that haven't antipersonnel weapons.
