Does Gauss Rifle ammo explode when hit? I don't think it would, but do the rules say different?

Your assumption was correct. The ammo is destroyed, but does not explode. The rifle itself explodes, causing 16 (lgr), 20 (gr) and ?? (don't know hgr) points of damage. But I'm sure you know this (not assuming your ignorance again  )

the hgr does 25 damage on explosion, I think.

Clan mechs are cased by default so even if the gauss goes boom its only confined to that area.
no biggie kerensky.
unless it blows up at side torso where the Clan's XL engines are.
